Since amino acids are found in almost every body tissue, they are also referred to as the building blocks of life – proteins.

Proteins contained in food are broken down by the body into individual amino acids and then reassembled into different endogenous proteins. For example, insulin is an amino acid chain consisting of 51 amino acids. The eight amino acids essential for humans are of particular importance, as these amino acids must be ingested with food and cannot be produced by the body itself. From these, the body can form all 21 anabolic amino acids. With these 21 amino acids, the human body can in turn form more than 5,000 different proteins, which are needed for the formation of muscle cells, collagen, connective tissue, cells, including organ cells, nerve cells, intestinal cells and skin cells, but also for the formation of hormones, enzymes, as well as blood cells and cells of the immune system.

Of the 21 proteinogenic (protein-forming) amino acids mentioned, twelve are non-essential and eight are essential. The body cannot produce the latter, so they must be ingested through food or supplements.

The re-evaluation of the nutritional value of dietary protein: NNU value – Net Nitrogen Utilization

The most important value for evaluating dietary proteins is the NNU value (from English – Net Nitrogen Utilization). It indicates the amount of nitrogen utilization of a protein – i.e., the anabolic amino acid structures. This means it is the percentage of amino acids capable of building new cells in the body. In other words, NNU describes the percentage of usable amino acids that follow the anabolic metabolic pathway and are thus available for cell building.

The higher this NNU value, the lower the amount of energy (calories) and the lower the amount of nitrogen breakdown products or protein waste. And vice versa, the lower the NNU value, the lower the proportion of amino acids from dietary protein that serve as precursors for the body's own protein synthesis. On the other hand, these amino acids, via the catabolic, i.e., degrading, protein metabolism, produce more metabolic waste or nitrogen waste. These are metabolic slags that are excreted from the organism and thus burden the excretory organs – especially the liver and kidneys.

This endogenous protein synthesis requires anabolic amino acids - the basic building blocks of life. Dietary protein is broken down into amino acids by digestive steps.
